
Situated within the Chinatown and Raffles Place vicinity, this restaurant offers authentic Japanese cuisine with an extensive menu to the busy business crowd around the area.
Hinoki Japanese Dining was launched in China Square Central two years back. The restaurant uses an original Osaka recipe that is delectable in a simplified form which focuses on attention to detail.
Zensai ($15)
Shiraou or silver fish in a shoyu sauce (presented in dainty glasses), Oysters topped with Mentai Mayonnaise and Century Egg on Chilled Tofu.
These appetisers were made spontaneously by chef and were delicately served in bite sized portions. My favourite was the oyster, fresh and flavorful it really was.
Assorted Sashimi ($55)
As much as I do love sashimi, I wonder if I would pay a bomb for this platter of five. Nonetheless the otoro was of the finest grade I am sure, ultra fatty practically melting in the mouth.
Zakana Foie Gras ($25)
Foie Gras wrapped over a substantial slice of pan fried Hamachi, topped with shaved truffle on a sakura leaf. One of the most well received dish of the evening, the fish was delicate and paired with the fatty liver. Mama Mia.
Shabu Shabu ($35)
The Shabu Shabu set consists of a hotpot kunbu soup base hotpot, assorted vegetables and US wagyu beef. Two dipping sauces are served, a special ponzu sauce for the beef and a goma sauce for the rest of the ingredients.

The word Shabu Shabu is derived from the sound emitted when the ingredients are stirred in the cooking pot. At Hinoki, perfectly marbled shaved meats are neatly plated, every slice was lightly pinked fresh and oh so yummy.
Santaro Li is a ryori-jin (masterchef) who has a whooping 40 years of c ulinary experiences and thus highly respected as one of the pioneers to introduce authentic sushi to Singapore. We are honoured to be sitting in as guests of the restaurant and having Li-San serving us with some of the finest grubs of the season.
